The Calçot is part of the onion family and native to the Spanish region of Catalonia, where it holds Protected Geographical Status (PGI). Similar to spring onions but larger in size, Calçots are harvested in late winter and enjoyed as a special delicacy from December to April. When cooked, they develop a smoky, slightly sweet flavour. Once cooked on the OFYR flamed grill, they will be served amongst a selection of other traditional Mediterranean dishes, all pairing perfectly with Estrella Damm; the beer of Barcelona.
Each year, Calçots are cultivated around the city of Valls in Tarragona, Catalonia. To celebrate the cherished Calçot harvest, the city holds Calçotada every year where the freshly picked Calçot onions are grilled over an open fire until charred, wrapped in newspaper and peeled by hand before being dipped into a traditional Romesco sauce.
With the help of José and his Pizarro team, this year, the Calçot season will be celebrated right here in the UK, transporting all the traditional elements of this special feast to The Swan Inn in Esher. For a vibrant and immersive experience that’s in keeping with true Catalonian style, don’t wear white – things could get messy!
